Mike’s in love with his new game, Skyrim. Oof. It’s super nerdy with quests and monsters and dragons and going for long walks in snow and riding horses. He LOVES this game and is always playing it on the TV – it’s an XBOX game. Part of this game includes buying food and making dinners medieval style – over a fire in a great big cauldron. One of the options he was able to make was Cabbage Apple Stew. I thought that sounded interesting, and proceeded to look for a recipe to try.
I did find one! I found it on the fancy food site called epicurious. Luckily I happened to have some thyme growing on our balcony, so I was able pluck the sprigs right from the plant. Lovely.
Cabbage Soup with Apples and Thyme
3 tablespoons butter
1 tablespoon olive oil
8 cups thinly sliced cored green cabbage (about 1/2 large head)
1 large onion, chopped
8 large fresh thyme sprigs
6 cups low-salt chicken broth
1 1/4 pounds Golden Delicious apples, peeled, cored, cut into 1/2-inch
Melt 1 tablespoon butter with oil in heavy large pot over medium-high heat. Add cabbage and onion; sauté until vegetables wilt and brown, stirring occasionally, about 15 minutes. Add 8 thyme sprigs and sauté 1 minute longer. Add broth and bring to boil. Reduce heat to medium and simmer 5 minutes. Season to taste with salt and pepper. (Soup can be made 1 day ahead. Cover and refrigerate. Rewarm before serving.)
Melt remaining 2 tablespoons butter in heavy large skillet over medium-high heat. Add apples and sauté until brown and tender, stirring occasionally, about 12 minutes. Season with salt and pepper.
Remove thyme sprigs from soup. Ladle soup into bowls; garnish with apples and chopped fresh thyme and serve.
I just have to tell you, this Nerd Stew is DELICIOUS. It’s the yummy sauteed apples you put on top of the cabbage soup that is the best, best, best part. Mike liked it a lot as well. He told me to make sure to keep the recipe. Whoa! You know what that means?
This soup is totally kid friendly! If Mike likes it, for sure your 6, 7, or 8 year old will love it, too.
