How to stay cool – 2 strategies

Strategy #1:

Lay your body as flat as possible on the floor, but definitely look around when someone is taking your photo. Make sure you stretch your legs allllll….the….way….out…..

Strategy #2:

Stay in the spot where the breeze is the best and…

don’t move a muscle.

It is warm tonight, but I’m not complaining. I am so happy it’s not raining and I’m looking forward to sleeping on top of the covers tonight.

One thing I’m going to have to work on is coming up with some kind of make ahead summer meals. The last few weeks after work I haven’t been eating dinner until after 8:00 and have been eating lunch out, out, out way too much. Tonight I’m looking up some salads I can make the night before. So far Mike has counted out most of the pasta salad family (except for macaroni) and any kind of “cold bean” salad. I’m not sure when we’ve ever had that, but it’s a no-go. However, he has also voted for hummus with proper pita bread. I think I’ll find a broccoli salad recipe, to whip up. This German Potato Salad may just do the trick, as well.

    I make a macaroni noodle salad with broccoli, carrots, cheese and either chicken or tuna. I put a little mayo, paprika and pepper. I was originally made with pepperoni but i can’t stand it! No surprise there. It’s a nice cool and fast dish.

    I love bean salad. Mike might just have bad church potluck memories – it might be worth revisiting… I also make some sort of hybrid salsa/brushetta salad with tomatoes, beans, cilantro, corn, green onions, hot sauce and apples. Taco Salad on crushed tortilla chips is good too. And don’t forget down home Tabouleh. Tonight I’m having potato salad – german style because I am out of Miracle Whip. German Style just means mustard and warm. 🙂 I’m pretty sure all of these would go in a jar.

    Want my Mexican Chef Salad? It’s super simple and a favourite around here. I also do a self marinating chicken drumette that you can make ahead and can be eaten hot or cold. My guys devour that. Also super simple. Nichoise salad is another go-to. Believe me, we do cold dinners in this house in the summer!
